SHINGO

SHINGO is a restaurant located in the historic La Palma Building in Coral Gables, Florida. It offers a 14-seat omakase experience showcasing seasonal ingredients sourced locally in Florida and throughout Japan.

The restaurant is helmed by Chef Shingo Akikuni, who dedicates his craft to honoring every part of the sushi ecosystem, from sea to service. The omakase experience is designed to be an ongoing conversation between nature, craft, and culture, shared across continents, generations, and the tireless hands of fishermen, farmers, artisans, and couriers.

The restaurant values omotenashi, the Japanese expression for true hospitality, and looks forward to extending its authentic spirit through food and service to its guests. The chefs receive each ingredient with reverence, carrying hundreds of years of history and using their years of disciplined technique and intuition to prepare every piece with intention.

The restaurant features tableware by Japanese ceramic artist Kazue Wakabayashi, whose practice bridges traditional Japanese ceramic aesthetics with an international perspective. Her ceramics embody a dialogue between material, technique, and time, offering works that resonate with both functional beauty and sculptural presence.
